Sea bass with orange and paprika
Products:
2 medium sea bass, whole, cleaned (about 350 g)
2 large shallots or 1 medium onion, finely chopped
Juice and peel of 2 large oranges (about 200 ml)
30 ml Extra Virgin Olive Oil
1 tsp red pepper (hot or sweet, according to your preferences)
1 tsp sea salt (finely ground)
Method of preparation:
Combine all ingredients in a shallow bowl and add the fish. Spread the fish with the mixture and rub gently into the skin and inner cavity. Place the fish on a large piece of aluminum foil and pour the remaining mixture on top. Close the aluminum foil and place on the hot grill. Leave to cook for 7-8 minutes, then open the foil and carefully turn the fish. Close the aluminum foil and cook for another 4-5 minutes, then open the foil again. Leave to cook for another 3-4 minutes so that the sauce is reduced and the skin is slightly crispy. Serve with sauce.
Advice:
Wash the orange peel well, for even better results, soak the oranges for at least 15 minutes in water.
